Mango Chia Pudding
It’s mango season and if you want to make the most of it while also putting a spring in your step each morning with a healthy breakfast, then you need to try this Mango Chia Pudding.

Ingredients
- 1 large mango, peeled and chopped
- 1 cup coconut milk
- 1 tablespoon organic maple syrup
- 1 teaspoon ground turmeric
- 5 tablespoon chia seeds
- 1/2 cup coconut yoghurt
- 1/2 mango, cubed to serve
- 1/2 cup macadamia nuts, to serve
- 1/4 cup coconut flakes, to serve
Method
- Mix mango, coconut milk, maple syrup, turmeric, and chia seeds in a high-speed blender. If you are using frozen mango, let it defrost first.
- Pour mixture into a large airtight container and refrigerate overnight.
- Serve with coconut yoghurt, fresh mango, macadamia nuts and coconut lakes.
